About the Recipe
A perfect easy fun way to use pumpkin and the kids will absolutely love it!
Ingredients
Butter and flour for greasing
13/4 cup flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon ground ginger
1 cup pumpkin puree
2 large eggs
50 gram unsalted butter, melted and cooled
1/4 cup vegetable oil
1/2 cup sugar
Preparation
1. Preheat oven to 160°C on fan bake. Lightly butter and flour one 23 x 13cm loaf pan.
2. Combine flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger in a large bowl and set aside.
3. In a mixer, beat the pumpkin puree, eggs, butter, vegetable oil, sugar and 2/3 cup water until well blended.
4. Turn the mixer to low and combine the flour mixture with the pumpkin mixture.
5. Pour into the prepared pan and bake for 45 to 50 minutes.
6. Allow to cool for 10 minutes in the pan, then transfer to wire rack to cool completely.
