Greek Yoghurt & Tahini Dip
"Tahini is in the chilled section of the supermarket and a wonderful simple addition to Greek Yoghurt. Add a little garlic and lemon and you have an incredible combination – do not be tempted to add more tahini – the delicious yoghurt is the hero here. Honey is not normally added to this traditional sauce, but just a small addition rounds off all the flavours perfectly"
Ingredients

1 large clove garlic
1 tsp salt
½ tsp liquid honey (opt)
1 cup Greek Yoghurt
2 Tbsp tahini
Juice of 1 lemon
Pepper and perhaps more salt
Method
Chop the garlic with the salt and place in a serving dish. Add the honey and mix well. Now add all the remaining ingredients. Mix well. Cover and place in the fridge for an hour or two prior to serving.
* To get more juice out of your fresh lemon put in the microwave for 20 seconds and then cut and squeeze.
** We served the dip with grilled mushrooms, raw baby tomatoes, falafel, olives, grilled peppers, olives and stuffed peppers from the supermarket deli counter.
You could serve this same sauce with grilled meats, seafood and roasted vege – it is incredibly delicious and the central key to the Middle Eastern menu
